What You'll Need
- Chemex brewer
- Chemex paper filter
- Coffee beans (amount based on recipe)
- Hot water (195-205°F)
- Gooseneck kettle
- Scale
- Timer

Prepare Your Equipment
Fold Chemex filter with three layers on one side. Place in brewer with thick side against spout. Rinse thoroughly with hot water and discard rinse water.

Grind Coffee
Grind coffee medium-coarse (slightly coarser than V60).

Bloom
Add water (3x coffee weight) in circular motion, making sure all grounds are saturated. Let it bloom.

First Pour
Pour water slowly in concentric circles, avoiding the edges. Continue until reaching the first pour target.

Second Pour
Once water level drops, continue pouring to reach final water weight. Maintain water level below the top of the filter.

Final Draw Down
Allow all water to drain. Total brew time should be around 4:00-4:30.
